Slow Cooker Chicken Tortilla Soup
This recipe is so easy and delicious and perfect for cooler weather!
Ingredients
4-6 frozen boneless, skinless chicken breasts
1 carton chicken broth
1 package frozen corn
1 can diced tomatoes
1 can diced green chiles
(You can also use Rotel or similar instead of tomatoes and chiles.)
1 tbsp. cumin
1 tbsp. chili powder
3 garlic cloves, smashed
Lime juice, to taste
1 tbsp. dried cilantro (or a handful of chopped fresh cilantro if you have it)
Directions
Cook above ingredients (except lime juice and cilantro) in slow cooker for 4.5 hours on low. Break up chicken, and add cilantro and lime juice. Serve with sour cream, shredded cheese, avocado slices and tortilla chips.
This is a recipe I came up with after a lot of trial and error. Feel free to add more chili powder for extra heat, or just provide chili powder with the garnish for those who like it hot!
